Toast Topper #22: Watermelon Curd

While I was in the process of trying to use up all the leftovers from school, I started to hit a wall when it came to the actual flesh of the watermelons I found myself with. Obviously, jelly got made and canned, but I wondered what – if anything – else I could do with the puree I had made.
